Okay so this may sound weird but all the Cubans I know had their abuelita at one point or another cook them huevos frito con arroz blanco (white rice with fried eggs). And any Cuban-American such as myself will reminisce back on this lard-infused heart attack on a platter as soul food. It makes me think warm and fuzzy thoughts and raises my cholesterol in one thump. Here’s my attempt to lighten the dish with brown rice and spinach. -Braised Bombshell
